Ingredients

  • 2 T butter
  • 1 clove garlic, minced
  • 2 lb asparagus, ends trimmed, cut into 1-inch pieces
  • Kosher salt
  • Freshly ground black pepper
  • 2 C low-sodium chicken broth
  • 1/2 C heavy cream, plus more for garnish
  • Freshly chopped dill, for garnish

Instructions

Step One:

  • In a heavy pot over medium heat, melt butter.
  • Add garlic and cook until fragrant, one minute.
  • Add asparagus, season with salt and pepper, and cook until golden, 5 minutes.
  • Add broth and simmer, covered, until asparagus is very tender but still green, 10 - 15 minutes.

Step Two:

Using an immersion blender, puree soup. Stir in cream. Season with salt and pepper.

Step Three:

Garnish with more cream, chives, and dill.

Asparagus soup? YES! It sounds… weird, but it’s delicious!

Asparagus soup is kind of like tomato soup’s overlooked cousin, but I’m bringing asparagus soup front and center because you need to try it and add this creamy goodness into your recipe rotation.

As long as you have an immersion blender, cream of asparagus soup is easy to make, and it’s a great little addition that brings some variety to your menu.
